This exceptional release comes with plenty of ageing! in 3 forms to be exact.
The Rye Spirit aged for 7 years in an ex Lark Distillery Single Malt cask. Then the whisky was vatted in steel tanks for 3 months to breath, and finally the whisky sat on our shelves in glass bottles for another 3 years.
This whisky is loaded with complexity!
Starting with a Caraway seeds explosion on the nose fronts, mellowing down into sweet and raw rye notes such as loose tea leaves, almond milk, sweet resin, & mint.
The palate opens up with an instant hit of light & spicy caramel, supported by a solid backbone of Maillard Reaction notes Smoky/Savoury/Lingering (due to our direct flame powered still), there is such elegance in this whisky, just a sip of it will reveal.
Food pairing suggestions: Hard cheeses (Emmental & Gruyere types), pork or veal schnitzel, & delicate white meat.
